Hello and happy Sunday! Stormy weather weekend here, we were supposed to go on a 3 day boat trip to the Hudson Valley to see the foliage but weather did not permit. So disappointed as that is an amazing way to take it all in. So, good day to stay in, cook something and catch up.
Hope you are having a wonderful weekend. I have been on a real kick to watch feel good (aka no violence, crime, blood,etc…..) movies this last week. We watched Seabiscuit which was so so good, even the 4th or 5th time. What an era, I always say I was absolute born in the wrong era. Then we watched A Good Year, another classic watch and this binge will likely continue today:)
I am craving movies that just make you feel good, that are beautiful, feature an uplifting story and are cinematically beautiful. Those all check every box. How about you? Seen anything good lately? OK onwards to a lot of pretty things this weekend….

4 AN AMAZING PARTY DIP! This is so good, definitely something you don’t get leftovers of because it goes fast. Super duper tasty, easy and best part is you can make it ahead of time. If you love crab meat, that variation is below, that’s my personal favorite way to make but either way, it is divine. Always a crowd please, with football season here and the upcoming holidays, this is one you definitely want to try!
1cupfreshly grated Parmesan cheese
1cupreduced-fat sour cream
1/2cupmayonnaise
4green onions, sliced
3tablespoonsfresh lemon juice
1garlic clove, pressed
1 1/4cups(5 oz.) shredded pepper Jack cheese
1(10-oz.) package frozen chopped spinach, thawed and well drained
1(14-oz.) can medium-size artichoke hearts, drained and chopped
Crackers and assorted fresh vegetables
Preheat oven to 350°. Stir together first 6 ingredients and 1 cup pepper Jack cheese. Fold in spinach and artichokes. Spoon into a lightly greased 1-qt. baking dish. Sprinkle with remaining 1/4 cup pepper Jack cheese.
Bake at 350° for 30 minutes or until center is hot and edges are bubbly. Sprinkle with freshly ground pepper to taste. Serve with crackers and assorted vegetables.
WITH CRAB MEAT- (My personal favorite way)Hot Spinach-Artichoke Dip with Crab: Increase mayonnaise to 1 cup and Parmesan cheese to 1 1/4 cups. Prepare recipe as directed in Step 1, folding in 1 lb. fresh jumbo lump crabmeat, drained and picked, with spinach and artichokes and spooning into a 2-qt. baking dish. Bake at 350° for 40 minutes or until center is hot and edges are bubbly. Makes: 10 to 12 servings. Hands-on time: 15 min., Total time: 55 min.
