Hello,happy Sunday and Happy Memorial Day weekend! Hope whatever you are up to is fun and mostly relaxing. We made a last minute escape to PB due to unusually chilly and rainy weather in NY. It was a good decision. Hard to believe the unofficial start of summer is here and I already feel like its going to slip away fast.
Since I am working on a large design project, not to mention my own, it’s going to be a summer of a lot of work with hopefully, some down time carved in between. We have a few trips planned and hope to be able to make a few quick beach trips, as well know summer goes by fast!
OK, onward to my post this holiday weekend-

1 A REMINDER OF THE MEANING OF MEMORIAL DAY We must all be reminded that this holiday weekend is so much more than just a fun long weekend that is the unofficial start to summer. It is a day to honor those who have so bravely given their lives and honor to our country. We all know freedom is never free and our country is great because of these men and women. I love this video narrated by Ronald Reagan, definitely worth sharing!
2 THE CUTEST RAFFIA BUCKET HAT AT A PRICE YOU WILL NOT BELIEVE! I saw this on someone and had to have it. I could not believe it was from Walmart and was $17.99! I love it so much I bought one first in tan and then in the black. Seriously, a super chic hat at a price I didn’t have to think twice about. Great for travel too as you can roll it up. Click here

4 A NEW HOTEL IN MAINE TO PUT ON YOUR RADAR The Asticou was originally opened in 1883. It went through a succession of changes through the 1900’s until it was purchased in 2025 and went under a massive renovation, it has reopened in 2026 and what a beauty! For those of us in the Northeast, this is a perfect weekend getaway idea. They have the main building/hotel and charming cottages as well. Love how it was done, click here to visit their website.
6 A WONDERFUL HOUSE TOUR Step into the magnificent Paris apartment of Timothy Corrigan, a supremely talented designer. Timothy has meticulously restored two incredible chateaus (worth watching on You Tube). I think this apartment by almost any measure would be anyone’s “dream Paris apartment”. Agree with him on the Paris flea market too, what fun!
6 AN AMAZINGLY DELICIOUS AND EASY SALAD This takes max 15 minute to make and it could easily become your favorite salad. It is so so good, overtime I make it, I question why I do not make it weekly (like my chicken salad). I seriously think I could open up a cafe with just these two items and it would be a monster hit:) This is great for a crowd too….ALWAYS a hit!
For the Salad:
2 cups cooked chicken, shredded (you can use a rotisserie chicken)
4 cups romaine lettuce, chopped
2 cups purple cabbage, shredded
1 cup shredded carrots
1/2 cup green onions, sliced
1/4 cup cilantro, chopped
1/4 cup sliced almonds
1/4 cup sesame seeds
1/2 cup crunchy chow mein noodles (optional)
For the Dressing:
1/4 cup soy sauce
2 tbsp rice vinegar
2 tbsp sesame oil
1 tbsp honey or sugar
1 tsp fresh ginger, grated *you can use powder but fresh is preferable
1 clove garlic, minced finely
Salt and pepper to taste
1.Salad base
In a large mixing bowl, combine the chopped romaine lettuce, shredded purple cabbage, shredded carrots, and the cooked chicken. Next, add in the sliced green onions, chopped cilantro, sliced almonds, and sesame seeds. If you want some extra crunch, toss in the crunchy chow mein noodles as well. Mix everything together gently so that it all blends nicely.
2. Dressing
In a separate small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey (or sugar), grated ginger, minced garlic, and a little salt and pepper. Keep whisking until everything is mixed well. You can also refrigerate this ahead of time if need be.
3. Combine and Serve:
Drizzle the dressing over your salad mixture, I do this a few minutes before serving. Toss it gently to ensure that all the ingredients are coated evenly in the dressing. I will sprinkle over some chopped cilantro and almonds on top for a finishing touch.
7 SUNDAY’S SURVEY OK, wondering if you use ChatGPT or another AI model? I have to admit, its pretty darn amazing. What doesn’t it know? I try to limit how often I go to it as I don’t want to feel dependent upon it but I am amazed at what it can churn out.
What isn’t so amazing is that all information inputted into these AI models are saved and used for training and improvement for their models. After 30 days, it says conversations are put in trash but many resources say it remains in their database. In a time of feeling like nothing is private, its a little unnerving.
Just in case, you are not aware, there is a little button on top right that you can press which will start temporary chat. Meaning this information is not saved or stored and does not go into your history nor saved to help improve their models. Just an FYI. OK curious if you use it-

After having consistently read your blog beginning with your first post, and because several months ago and today, you mentioned possibly pursuing your restaurant idea of which I sent a link to the “history” of Chicken Salad Chick (conceptualized/implemented/franchised in Auburn, AL, Home of Auburn University). My suggestions for your consideration are to offer:
-Minimum two BASIC chicken salads with VARIOUS fruits, vegetables, nuts, cheese, etc. available for SIDES as desired by the purchaser rather than incorporating those items within each salad. This concept promotes more freshness, crispness, and flavor of each item. Additionally, if almonds are offered, sliced almonds are preferable. If pecans are offered, FANCY pecan terminology of “halves” and of “medium or small pieces” should be utilized. However, because my husband’s father began his pecan business during Fall 1960 & because my husband began working pecans at that time when he was 5 years old, BEWARE of sourcing pecans from various MOST reputable LARGE pecan farms & suppliers which often ship inferior pecans. ONLY people with keenly-trained abilities CAN detect QUALITY pecans of numerous pecan varieties. If you are ever interested in quality pecans, pecan season generally begins during October and is dependent on various weather conditions. Different pecan varieties are harvested at various times. Pecans are also available as confections and as dessert pecans. Just because several companies’ confectionary pecans and dessert pecans may have the same names, does NOT equate to their being of the same desired taste, quality, etc. My husband”s business ships throughout the United States.
-Baked herbed chicken breast and baked herbed seafood &/or fish filet.
-Cup or bowl of your beef bourguignon would serve as a “tribute” to your family.
-QUALITY bread-group item(s).
-Favorite dessert(s).
