With luck, I will be enjoying my last few days in PB. We had one unusually cold day but for the most part, \u00a0temps and the weather has been very pleasant, mid to high 60&#8217;s and lots of sun! So much so, \u00a0that three spaces in our PB home are papered in her gorgeous designs. \u00a0Love that all her designs are also available in fabrics, as I am now trying to decide on a fabric to accent the bedroom upstairs. I love that you can custom color, there is pretty much nothing this dynamo cannot do! <a left;\"><strong>2 A\u00a0DELICIOUS\u00a0CHICKEN POT PIE <\/strong>Nothing\u00a0like a warm, stick to your\u00a0ribs comfort food! In the winter\u00a0especially and double so when I am in the south. So while in Palmetto Bluff decided\u00a0to\u00a0make a chicken pot pie for dinner as we were getting\u00a0tired\u00a0of\u00a0eating out. We both agree\u00a0nothing beats a\u00a0home cooked meal,\u00a0even something very simple.<\/p>\n<p style=\"text-align: left;\">I combined a few recipes to kind of make my own and I will tell you this was sooo good! I will even argue that the ready made pie crust seriously tasted as good as a homemade crust. So here is what I did-<\/p>\n<ul>\n<li><span data-ingredient-quantity=\"true\">1 shredded or cut up rotisserie chicken OR<\/span>\u00a0<span data-ingredient-unit=\"true\">pound<\/span> <span data-ingredient-name=\"true\">skinless, boneless chicken breast halves &#8211; cubed (to me, rotisserie chicken is the way to go)<\/span><\/li>\n<li><span data-ingredient-name=\"true\">3 sliced carrots\u00a0<\/span><\/li>\n<li><span data-ingredient-quantity=\"true\">1<\/span> <span data-ingredient-unit=\"true\">cup<\/span> <span data-ingredient-name=\"true\">frozen green peas<\/span><\/li>\n<li><span data-ingredient-quantity=\"true\">3\/4<\/span>\u00a0<span data-ingredient-unit=\"true\">cup<\/span> <span data-ingredient-name=\"true\">sliced celery<\/span><\/li>\n<li><span data-ingredient-quantity=\"true\">\u2153<\/span> <span data-ingredient-unit=\"true\">cup<\/span> <span data-ingredient-name=\"true\">butter<\/span><\/li>\n<li>1-2 large Yukon gold potatoes<\/li>\n<li><span data-ingredient-quantity=\"true\">2<\/span> <span data-ingredient-unit=\"true\">cup<\/span> <span data-ingredient-name=\"true\">chopped onion<\/span><\/li>\n<li><span data-ingredient-quantity=\"true\">\u2153<\/span> <span data-ingredient-unit=\"true\">cup<\/span> <span data-ingredient-name=\"true\">all-purpose flour<\/span><\/li>\n<li><span data-ingredient-quantity=\"true\">\u00bd<\/span> <span data-ingredient-unit=\"true\">teaspoon<\/span> <span data-ingredient-name=\"true\">salt<\/span><\/li>\n<li><span data-ingredient-quantity=\"true\">\u00bc<\/span> <span data-ingredient-unit=\"true\">teaspoon<\/span> <span data-ingredient-name=\"true\">black pepper<\/span><\/li>\n<li><span data-ingredient-quantity=\"true\">1 1\/2<\/span>\u00a0<span data-ingredient-unit=\"true\">cups<\/span> <span data-ingredient-name=\"true\">chicken broth<\/span><\/li>\n<li><span data-ingredient-quantity=\"true\">1\/2<\/span> <span data-ingredient-unit=\"true\">cup<\/span>\u00a0heavy cream or 2% milk<\/li>\n<li><span data-ingredient-quantity=\"true\">2<\/span> <span data-ingredient-unit=\"true\">(9 inch) <\/span><span data-ingredient-name=\"true\">unbaked pie crusts<\/span><\/li>\n<li>1\/2 teaspoon thyme<\/li>\n<\/ul>\n<ol class=\"css-9wvcvc et3p2gv0\">\n<li>Preheat the oven to 375\u00baF.<\/li>\n<li>In a large pot, melt the butter over medium-high heat, then add the onion, carrot, potatoes and celery. Cook, stirring occasionally,\u00a0until the onion begins to turn translucent, about 3 minutes.<\/li>\n<li>Stir in the chicken then sprinkle the flour over top and stir it until it&#8217;s all combined with the meat and vegetables. Cook for 1 minute, then pour in the chicken broth. Stir and let it cook and thicken.\u00a0Once it starts to thicken add the salt, pepper, and thyme.<\/li>\n<li>Add the half-and-half or cream, then stir the mixture and let it bubble and thicken, about 3 minutes. If it is too thick, you can add a bit of chicken broth<\/li>\n<li>Pour the filling into an approx 2-quart baking dish. Roll out the pie crust on a floured surface and be sure its soft and pliable (room temp)<\/li>\n<li>Line the bottom of a baking dish with one slightly rolled out (thawed at room temp) pie crust<\/li>\n<li>Pour mixture (after its room temperature, do not do while hot) into baking dish<\/li>\n<li>Add the top layer of pie crust<\/li>\n<li>Mix together the egg with 2 tablespoons of\u00a0water and brush it all over the surface of the crust. Use a fork to make around 6-8 indentations (so heat can escape)<\/li>\n<li>Place the pie on a baking sheet and bake until the crust is deep golden brown and the filling is bubbly, 30-40 minutes. To prevent the crust from getting too brown, you might want to cover it lightly with foil for the last 10 minutes of baking<\/li>\n<\/ol>\n<p style=\"text-align: center;\"><img decoding=\"async\"
