Yesterday we went to CT and got to take in some incredible fall foliage. It was such a treat&#8230;..what a majestic season fall is. I just can&#8217;t get enough and wish I could push a pause button! Today is my son&#8217;s birthday (eldest).<\/p>\n<p>Since its going to be rainy and cool, we are staying home and I am making his favorite dinner and a homemade carrot cake. Works for me! Looking forward to a day of rest before an insanely busy week ahead. My entire family stayed there when we were getting married and we hosted a wonderful dinner there. We have had friends and family visit and stay there and all my memories are of what an elegant, establishment it is, one from a bygone era that I wish I could escape to (especially now)!<\/p>\n<p style=\"text-align: left;\">They are about to embark on a historic major renovation and the entire contents have been moved to a massive warehouse in Boston. In under two weeks, every single item will be on the auction block. A chance to own a piece of history! Just about guilt free too:) This can be a great side salad or served as main course with grilled chicken or shrimp. Super tasty.<\/p>\n<p style=\"text-align: left;\">One key is &#8220;massaging&#8221; the kale. I laughed when I first heard it but it&#8217;s true! class=\"wprm-recipe-instruction-group\">\n<ol class=\"wprm-recipe-instructions\">\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Place the thinly cut kale leaves in a large bowl. Drizzle with the olive oil and massage the oil into the leaves. Massage for a good 5-7 minutes.<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Let the kale sit while you make the dressing. In a food processor,\u00a0combine the garlic cloves with mayo and yogurt. Then add anchovies, mustard, vinegar, lemon juice, Worcestershire sauce salt and pepper. Blend until pureed.\u00a0With the processor still on, stream in the olive oil until a creamy dressing forms. [This will make more dressing than needed, but you can store it sealed in the fridge for about 3-4\u00a0days and stir well before using.]<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">You can either toast your pine nuts in the oven or get a skillet and cook them until slightly golden (you will smell them when done)<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Drizzle a few tablespoons of the dressing over the kale and toss it well. I like to toss this for a food 1 to 2 minutes so the dressing is evenly dispersed. Cover with the basked pinenuts and shaved Parmesan.
