Hi and a very Happy Fathers Day to all the dads out there! I am so lucky to have my dad with us and feel so grateful to have him as such an incredible role model. To. know him is to love him! And to my own husband who is an incredible dad to our three sons, they are so fortunate to have him. He has set the bar high. Wishing all the dads out there a wonderful, relaxing day and hope you are treated extra kind today.

We are having a lunch/dinner with the boys and Phillip of course and other than that, low key. Weather is….raining again, you guessed it! We were due to go out to Southampton but not in this weather. So my husband wants to go and buy a bunch of things for his garage and cars (his passion) and he will likely tinker in the garage for the afternoon.

Anywho, onward to my post this weekend…..

1 LEMON PASTA! I made this the other night and it was so darn good. I have made it before with peas or chopped up asparagus which is also great. I served this with grilled chicken and a big salad. It was like summer on a plate.

  • 1 pound favorite pasta (normally its spaghetti)but I used what pasta I had on hand 
  • 1 ¼ cup heavy cream- I only used 1/2 cup and it was great
  • ½ cup finely grated Parmigiano-Reggiano, plus more to garnish
  • 4 tablespoons butter
  • 2 ½ tablespoons fresh lemon juice (must be fresh)
  • 1 ¼ teaspoon lemon zest, packed
  • 1 teaspoon black pepper
  • Salt, to taste
  • Basil for garnish (I also cut some up and put in the sauce,if you love basil)

 

  • In a large skillet, add butter, lemon juice and zest over medium heat. Stirring occasionally, let the butter melt and simmer for 20 seconds. Pour in the cream, black pepper, and salt to taste. Stir.
  • Over medium/low heat, bring the cream mixture to a very gentle simmer. Once simmering, start boiling your pasta. Let the cream mixture thicken and reduce by about one-quarter while your pasta is boiling. Stir often. Cream mixture will reduce by one-quarter in about 8-10 minutes.
  • Add Parmesan cheese to sauce and stir over low heat. Drain pasta and use tongs to toss pasta into the cream mixture.
  • Serve right away. Plate with more black pepper, cheese, and a sprinkle of lemon zest.

4 FIRST TASTE OF SUMMER This is like summer in a picture. A friend stopped over and brought lobster rolls they were good (but I like mine even better) however these ranked high and it was such an unexpected treat. We then went out on the boat for a late afternoon quick ride and it was so nice to feel the sun beaming on my face, seeing all the boats out welcoming the short seasons of summer……

 

5 NEW ROBE ALERT! Somehow in our move, my two most favorite robes have gone missing. Think they needed up i some of our packed boxes and they are in storage so started hunting for a new one. I found this robe and loooove it! Of course that its blue and white, but its 100% cotton, very soft, great length and a perfect weight for summer. So fresh and crisp. Click here to see.

 

6  A HEARTWARMING STORY You know there are stories you come across that just tug at your heartstrings. Stories that you dont necessarily hear about all over the place, not viral stories. but beautiful stories about the hearts of so many good people.

I came across the story of Paulette Johnson who owns and runs her own restaurant, but closes down every Monday to feed, the hungry, the needy, the homeless, anyone who needs a place to go and feel welcome. She was inspired to do this based upon her own personal hardships earlier in life and I just found this story so beautiful and heartwarming. I think i want to start a go fund me page to help her with this. What do you think?

Father’s Day is a tough day for me these days. My father died almost three years ago, not too long after my husband died. My father lived until he was almost 101 years old, so he had a full life. But my husband died unexpectedly and I know the day is difficult for my daughter, son, and grandchildren. I try to keep my husband’s memory alive by not being afraid to talk about him to my grandchildren. Timing is everything.
Your lobster sandwich and boat ride sound like the perfect way to spend the day.
