Good Sunday morning! I will be out of town for a few days so hoping this posts on time. Hope everyone is having a wonderful weekend. It’s been a crazily busy summer for us, not much down time and I am looking SO forward as of next week to have a few weeks with not much on the calendar….sounds like heaven! Let’s move onto my post this Sunday…

2 THE TASTIEST CHICKEN SOUP When we got back from Boston I felt a cold coming on. I popped Vitamin C and D and the proceeded to make a big pot of my incredible delicious chicken soup. I think the key with this soup is the dill and lemon.

Here’s how I make it. I love that its hearty enough to stand in as a meal, just serve with some crusty bread and you are good! Such a good one to keep in mind for the cold months ahead.

Been making this for years and it never ever disappoints. The kicker is the fresh dill and plenty of lemon. Here is the recipe-

  • 2-2.5 lbs chicken breast (skinless and boneless) cut in half
  • 3 Yukon gold potatoes
  • 4-5 turnips
  • 3-4 carrots
  • 3 stalks of celery finely cut
  • 1 large onion
  • Chicken stock or 1 packet of Knorrs Chicken (or 3 cubes of chicken bullion)
  • fresh lemon juice (about 1/2 cup)
  • 1/4 cup fresh or dried dill (fresh is better)
  • A few tbsp of chopped parsley (optional)
  • 1/2 cup orzo

Chop onion and add chicken and onion to boiling salted water. After about 15 min add vegetables, salt pepper, chicken seasoning and dill. Add lemon juice taste. Let cook approx 2 hours on low heat until you can easily shred chicken. I add extra dill at the end. Cook orzo in separate pot until al dente. Set aside. I put a few TBSP of the orzo on bottom of soup bowl then add soup (the al dente orzo will cook a little more with the piping hot soup on top). Top with fresh parsley or a small pinch of fresh dill and enjoy!

4 AMAZING CHAT GPT  I am just amazed at what Chat GPT can do. It can be a therapist, a banker, talk you out of your anxiety (used it once for this) and help make major decisions. I have only used it for simple things but truly astounded at its capabilities. Scary and fascinating at the same time. Do you use it?

 

5 YES THEY ARE REALLY PAPER PLATES! So I had shared these months ago. I have a small stash (about 20 sets of each) of the square dinner plate, square salad plate and round salad/appetizer plates. We are not putting them online as we don’t have enough however if you are one of the people who had been interested in them please email info@enchantedhome.com. Just getting them out of storage, if you want paper plates…they don’t get any prettier or more elegant than these!

7 SUNDAY’S SURVEY This goes back our incredible collection of needlepoint stockings coming next month. I shared two of the samples the other day. So we also have the option to make the full sized stocking approx 14″ and wondering what you think?

The time to make this decision is now.  We will have 8 patterns, thinking of doing four of them, then someone else weighed in and suggested less per style but to offer all styles. Help! Would love your thoughts, only have these two to share right now but I can assure you, they are all equally beautiful!

As usual, another delightful post. Can’t tell you how much I look forward to Seven on Sunday!

A lot to love here! Cannot wait for the stockings (hope you will also do full size) and already own some of the lamps, they are fantastic, I use them indoors and out. They have been a game changer.
Only started using Chat Gpt recently, it is quite amazing. I make sure to try to do things on my own first (brain power) but if I am stumped I will go to Chat. there is no doubt it is an incredible resource for us to have. Students- not so much:)

that soup sounds looks so good. I wish I had a bowl now as I’m home sick!

Love the stockings and hope you will consider doing the full size as well. Just emailed you about the paper plates how beautiful they are.

The lamps are so cute…would work great on our side porch!! Your chicken soup looks amazing, will have to make this!! The mini stockings are beautiful…looking forward to seeing all of them.

I am the kind of eyeballs everything but I would say start with about 8 cups of water, you can add more if you need.
