Good morning and Happy Easter! First the winner of the pumpkin contest is-

Hope you are having a wonderful weekend and that whatever you are doing for Easter is relaxing and joyous. We were supposed to be going  out for an Easter lunch and for Phillip will get to visit the Easter bunny. I was somewhat looking forward to a day off however 2 family members are under the weather (including Phillip) so as of 2 days ago I am suddenly hosting!

On top of that we have some friends joining us so in a way it will be a bit easier/more relaxed being here at home. I say that now, let’s see if I say the same thing later today, haha.  Spent the day yesterday prepping and will go put the finishing touches on my table. Dreary rainy day in NY, so it kind of works out to be home. Things work out for a reason, you know what they say about those best laid plans. Sometimes, you just need to go with it.

Spring is officially here and we have had some wonderful spring days. We are already in the fall planning mode at Enchanted Home which sounds crazy but truth is, in retail this is how it works. I will be giving you a sneak peek of our magnificent pumpkins next week. Onward to my post today-

1 FLOWER POWER! Sometimes you need a flower fix but don’t have fresh flowers on hand. Last week, the house felt like it was stuck in a post winter rut.  Thankfully our lifelike faux to the rescue! I have a stash of our great faux flowers, (many are packed away) I was tired of looking at my wintry amaryllis so scrounged around found what I could find, haphazardly put them together and they actually looked really imperfectly pretty. It certainly felt more appropriate than the amaryllis! I often mix the faux with the real and they always come out amazing and believable ! Click here to see our lifelike florals

 

2 PUMPKINS On Friday I shared with you, some of the most exciting beautiful pumpkins we have ever created (click here if you missed the post, you won’t want to miss it)! One collection that was not ready yet was the gold/white so I would love to hear your take on the idea of these gold pumpkins too!  I happen to love these, think they really elevate the idea of decorating with pumpkins!

4 NEW RECIPE ALERT! I forgot just how good this was. Made it the other night because its one of my son’s favorites and honestly I think its an easy dish to make and always a guaranteed crowd pleaser whether for 2 or 8. I also like that you can make this ahead of time, refrigerate and stick in oven when ready. In fact, think it might be even better to do this ahead of time as it has a chance to marinate longer.

 

CHICKEN MARSALA

  • 4 7-9 ounce boneless skinless chicken breasts
  • 1 cup all-purpose flour
  • 1/3 cup olive oil
  • 4 cups sliced cremini or baby bella mushrooms
  • 1 peeled small-diced shallot
  • 2 finely minced garlic cloves
  • 2 tablespoons unsalted butter
  • 2/3 cup dry marsala wine
  • 2 cups chicken stock
  • salt and pepper to taste
  • finely chopped fresh Italian parsley for garnish

 

HOW TO MAKE-

Slice the chicken breasts in half width wise and then gently pound each sliced breast between two pieces of plastic wrap using a mallet. Maybe 15 to 20 gently pounds. I like mine very thin but do it to preference.
Season each chicken breast on each side with salt and pepper and set aside.
In a medium-size bowl mix together the flour and salt, and pepper until combined.
Next, lightly dredge each chicken breast in the seasoned flour and knock off any excess. Set aside on a plate, platter, or cookie sheet tray lined with parchment paper.
Heat the olive oil in a very large frying pan over medium heat to 350° F. Add a sprinkle of flour to the oil and if it turns light brown quickly, then you are good to go.
Add in the chicken breasts and cook for 4 to 5 minutes or until browned. Flip over and cook for an additional 2 minutes.
Set the chicken breasts aside and then add the sliced mushrooms to the pan and turn the heat up to high.
Brown the mushrooms very well on all sides, which takes about 10  minutes while occasionally stirring.
Push the mushrooms to 1 side of the pan and in the other side of the pan add in the shallots, garlic, and butter and cook while stirring for 1 minute or until lightly browned.
Mix all of the ingredients together and then remove the pan from the burner.
Deglaze with the marsala wine and then return the pan to the heat and cook until the amount of liquid is reduced in half
Add in the chicken stock and cook until the amount of liquid is reduced in half.
Season the mushroom sauce with salt and pepper and then add the chicken back to the pan and cook for 30 to 45 seconds or until it is warmed. This is great with potatoes, rice or some kind of pasta and a side vegetable. I normally due mashed potatoes and broccoli or string beans.

 

5 STUNNING GARDEN TOUR WITH BETTIE I thought this was a beautiful time of year to share the magnificent gardens  of Bettie Bearden Pardee. I have had the pleasure of being invited to her magnificent home and can tell you its every bit as dreamy in person. And she is an absolute delight, gracious, kind and warm. Every inch both inside and out,  is spectacularly manicured and there is something blooming at every turn. A true dream!

 

6 MY DREAM CAFE I have always been a dreamer and figure I will continue to be one until I am old and gray. I have for, so long,  dreamed of a beautiful charming cafè, I. know just how I would want it to look, the kind of menu I would offer. Its more of a concept, a charming cafe,and then on either side there would be a small florist on one side and a charming home accessories shop on the other.  I had such fun playing around with this concept and almost wish I didn’t because now I can’t get it out of my mind:)

I know the restaurant business is grueling but is fun to dream.

I love your faux flowers and have the lilacs and orchids and will attest to the fact that they are super realistic. Loved this post. Hope the little prince feels better. I am sure it will be much more relaxing being at home than being out on a holiday. We always trade off with my sister hosting.

I have a wonderful, but small, collection of pumpkins and can see how the some gold ones would fit in perfectly!

The garden tour was beautiful, thanks for sharing it. I love the gold pumpkins, they would fit into any color decor which makes them like a neutral. Since this dream stays on your mind, maybe you should do it! It looks “enchanting” and I know it would be a hit. An aside, I am still not receiving your blog posts. I received a couple emails from Christy ( your team) that I would be receiving a confirmation email to return to her to be included on the distribution list. However, I never have received it, and I have emailed her twice since. I was on your distribution list for many years, and then the blog posts just stopped. I wrote several times asking but never received a reply until just recently when you posted that some weren’t receiving your posts…I never unsubscribed….Hopefully, this can be remedied. It may not just be me…. Thanks so much!

Happy happy Easter! I love the gold pumpkins as I did the others as well. And yes to that cafe! That would be an instant hit, would you ever consider it? I love chicken Marsala, not much of a cook however this I would be willing to try (my family would be so impressed). The garden tour was exquisite, that is when you see gardening being a true labor of love. Hope you are enjoying Easter with your precious little bunny Phillip.

I’ve never been a pumpkin fan other than using real pumpkins, but these gold pumpkins changed all that. Love all of them and they would be so versatile to use.

BUT your imaginery cafe ??? Oh it’s truly magical !! And the colour ?? It’s probably the most stunning , quaint restaurant I’ve ever seen ! That dream needs to come to fruition!! I can imagine lovely Afternoon Teas being served there as well.
