Hello, hope everyone is having a great weekend, coming off the heels of an impromptu visit to Palmetto Bluff which was really nice. The weather over Memorial Day weekend in NY was really bad so we were lucky to escape. I realized this summer is not going to be the normal relaxing summer I look forward to. Between the. house renovation and my new design job in the city- there will not be much down time so I will take it when and where I can get it. And we all know how fast summer goes by.
On the Enchanted Home front- we are starting to be able to move some of our containers which is a big relief. Our incredible pumpkin collection is already on the way if you can believe it (and these are by far the prettiest pumpkins ever)! And we are working on Christmas ornaments, sounds crazy I know, but these things take a lot of time by the time they actually land on my website and are for sale. So, plenty on my plate and am chugging along. OK, onward to my post…..

1 ARIEL OKIN AND DANIKA HERRICK Last year went to the wonderful design summit that Ariel Lorkin started in CT and it was such fun. So disappointed I cannot go this year but it happens on the weekend i am hosting a baby shower for my daughter in law! It is an immersive weekend filled with amzizng vendors, designer panels, workshops, and much more. Held at the beautiful Mayflower Inn and spa, it is such a great event. 5 DOES THE PERFECT CHICKEN CUTLET EXIST? YES! I will argue yes and that this recipe is the winning recipe. No pounding involved! I could not believe how a few simple steps made these the best chicken cutlets I have had.
Found this on a Tiktok post from an Italian “nonna” and must say these were so incredible good! And my son, the ultimate taste tester agreed, ate 4 or 5 in one sitting:)
2-3 Chicken cutlets
about 3/4 cup of Italian bread crumbs
3/4 cup Panko bread crumbs
3 eggs(beaten)
1/2 cup Parmesan cheese, grated
Vegetable oil
Salt/pepper
1 lemon
chopped parsley (optional)
Take your cutlets and with a very sharp knife, slice starting at the thicker edge, the cutlet horizontally (parallel to the cutting board) into 3-4 very thin cutlets…no pounding needed! So each cutlet will give you 3-4 thin cutlets. Whisk the eggs then add salt to the egg mixture, put in a shallow dish, add all chicken cutlets, mix them very well with a fork. You can also keep them in the egg mixture for a few hours if you are not ready to cook. Mix both bread crumbs and Parmesan in a shallow dish. Take your cutlet and coat very well (patting down with some pressure) the mixture on both sides until fully and well coated.
Preheat your vegetable oil (should be more than just a coating) throw a few bread crumbs in and if they fry your oil is ready. Cook cutlets approx 5 minutes on each side on a medium flame. Remove and add a little squeeze of lemon. I will add some chopped fresh parsley if I have it on hand. Serve however you would normally serve them. Even on their own, they are sooo tasty and have the best crunch.
I like serving mine with a mix of arugula, very ripe tomatoes and some shaved parmesan on top. Very tasty!

It smells so so good, I get compliments on it all the time. It is super fresh, and to me, it smells like you just got out of a shower. A perfect daytime fragrance. If I have one signature fragrance, this is most certainly the one. The icing on the cake is that it really lasts, all day. Click here

I thought about what the word luxury means now and what it meant then. Vastly different. Curious what luxury if you had to choose one do you most value these days/

I have been making that same cutlet recipe using thin cut pork chops for years. My family loves it. I add some butter to the olive oil when first cooking them slightly in the pan just to lightly brown, then I cook them at 400 degrees in the oven for 9-10 minutes total—no turning over.
Great minds ….! I probably make the exact same chicken cutlet recipe (I call mine chicken Milanese) once a week because my husband loves it so much and it is quick with maximum flavor. Trader Joe’s sells chicken breasts already thin sliced to save me some time and I make enough so the hubster has leftovers to make a delicious sandwich with the next day. Like you, I also top with fresh arugula and halved cherry tomatoes tossed with lemon juice and grated parmesan. Hope you are enjoying these early summer days!
